Today is the holiday of the Turkic peoples Novruz Bayram, Novruz - the holiday of spring or the Eastern (Persian) New Year. In Farsi, its name means "new day". With the advent of spring, warm days come, nature wakes up and begins to change its decorations. Novruz symbolizes the revival of nature, the triumph of life, hopes for a generous harvest year.

On this holiday, it is customary to cook a lot of baked sweets and treat friends and relatives.

One of these treats is shor gogal, and that is what we are eating today.

Ingredients:

For test:

1 kg flour

1 egg

1.5 st. (300 ml) milk

3 art. l. matsoni (yogurt)

80 g butter

1 tsp salt

1 tsp turmeric

1 tsp (7g) dry yeast

For filling:

1.5 st. flour

150 g butter

1 tsp salt

1 tsp turmeric

1 tsp cumin - zira (ground)

For lubrication:

egg yolk

white or black sesame, you can also use cumin or poppy seeds.

There are many recipes for making gogal dough on the Internet,

I, as you have already recognized me, like to simplify

so in this video I will use ready-made, purchased puff pastry,

but if you want to make the dough yourself, the recipe is in the description

we use ready-made dough and therefore immediately proceed to the filling

for the filling we need 1.5 cups of flour

fry the flour in a dry frying pan

stirring it so it doesn't burn

gradually stirring the flour in the pan, add seasonings

for 1.5 cups of flour, I add 1 teaspoon of turmeric and the same amount of cumin - grated cumin

add 1 teaspoon of salt, the more salt, the saltier the gogal will be, I think that 1 teaspoon will be enough for such a quantity of stuffing

pour the fried and cooled flour into a mixer or combine, add 150 grams of butter

mix in a blender or mixer until a homogeneous mass is formed

**if the butter is cold, the filling will be lighter**

the filling is ready and it remains to transfer it to another bowl

I have store-bought dough

This dough comes frozen and needs to be thawed at room temperature.

open it carefully so as not to tear

brush the dough on both sides with olive oil, you can also use ghee or any vegetable oil.

Having smeared the dough with oil, it needs to be rolled out, expanded,

buttered dough rolls out easily,

now cut the dough into strips 5 to 6 cm wide.

now we twist each strip into a roll so that there is no air between the layers of dough

we wrap the tip of the dough in the center, with two fingers we make a recess in the center where we put the filling

we fill the rest of the buns in the same way: the edge to the center, the hole in the center, the filling into the hole and close it all

Place the buns on a baking sheet, seam side down.

preheat the oven to 200 degrees

in order for our gogal to turn out ruddy and beautiful, I will use the yolk.

Some people use a whole egg, but I prefer only the yolk,

having greased the buns, we will decorate them with white and black conjut, you can also use poppy or cumin

buns will be baked at a temperature of 200 degrees for about 15 minutes
